The darker, subtler and more complex 2020 Textures de Pedra was produced with a blend of 50% Xarel.lo Vermell, 25% Sumoll and 25% Bastard Negre. It was first produced in 2011 and is the evolution of a wine he called Elisabeth Raventós, an homage to his sister. It was the seed for their first site-specific wine, a blanc de noirs, because it has a majority of red grapes, from two hectares in the Viña Mes Alta. It is becoming their most iconic wine. It comes from a different vintage, 2020, much older and before the change of cycle to much warmer and drier years. There is a jump in quality here; the mouthfeel, chalkiness and persistence are different. It's still showing very young, fresh and lively, with a pungent palate and great persistence. This ages no less than 42 months in bottle with the lees and has the cru vinification of direct pressing, fermentation in concrete with indigenous yeasts and no added sugar, coming in bone dry and with a sharp sensation in the palate. It's a very serious sparkling Mediterranean wine.

Vinul spumant Textures de Pedra poartă numele după podgoria sa de origine, Vinya Més Alta, situată în vârful Turó del Serral, cel mai înalt punct de pe proprietate, unde solurile sunt pietroase. Geologia acestor parcele înseamnă că rădăcinile viței de vie trebuie să ajungă în straturi mai adânci pentru a găsi apă (solul este mai proaspăt), iar astfel se produc struguri care favorizează crearea unor vinuri mai concentrate, cu mai multă structură. Un spumant blanc de noir, cu o identitate și personalitate unice. 50% Xarel-lo vermell, 25% Bastard Negre (Graciano) și 25% Sumoll cu prima fermentare în cuve inox la o temperatură controlată, separând soiurile și tipurile de sol, urmată de asamblare și a doua fermentare în sticlă cu maturare minimă de 48 de luni cu drojdia. Nu se adăugă lichior de expediție iar data degorjării este indicată pe eticheta din spate. Note de degustare – un spumant energetic, cu un melanj perfect intre caracterul oferit de maturarea îndelungată pe drojdii și influențele climatului mediteraneean cu note pietros-saline și un final evolutiv fructat mineral.
